
- One leek
- 500gm or 2 small packs tofu (the green one from the Korean shop was nice)
- 4-5 spoons of Chinese, spicy bean paste
- One teaspoon of Szechuan pepper
- One small hand of diced mustard greens
- 4 spoons soy sauce
- 2 spoons sake
- 2 spoons mirin
- 4 spoons grated ginger
- Half a pack dashi
- 1-2 cups hot water
- 500gm pork mince
⤱THE WORK⤱
- Heat pan and vegetable oil, add garlic, leek and grated ginger.
- Fry until fragrant
- Add pork and fry pork until crumbly
- mix bean paste, soy sauce, sake, mirin, dashi, hot water and pour over the mix
- add mustard greens and Szechuan pepper and tofu (careful not to overmix and break up the tofu)
- dust everything with one soupspoon of flour: let broil to thicken mix
serve with Japanese style cooked white rice
